Edgefall Rapidly Aged Whiskey - Less Carbon

Aim
We will produce a whiskey that has all the flavor and characteristics of a much older whiskey in a fraction of the time. Less wood = green!
To start, producing our whiskey will take 1 tree where traditional whiskey producers would use 1,038 to produce the same amount.
For some, whiskey is a business; for Tobey Pearson, the founder of Edgefall Whiskey, it’s a family inheritance. The roots of this venture stretch back to the clandestine stills of my grandfather, a legendary moonshiner who understood that the best spirits require two things: unwavering patience and a bit of defiance.
At Edgefall, we’ve traded the moonlit woods for precision whiskey making, but the core philosophy remains unchanged. We believe whiskey should tell a story of where it came from—balancing the rugged, hand-crafted legacy of the past with a refined, modern edge.

This will also be ecologically sound as the process uses less wood abd dies not leak alcohol into the atmosphere like traditional aging.
